Month Long Tour to West Coast Planned

Hello,
I'm planning a month long bike trip in September from Chicago to Seattle on my Bike Friday NWT, a folding bike with 20 " wheels, a rear rack that can hold 2 panniers, and a trailer connected to the suitcase. I've never planned for a tour before, but I'd like some feedback as to gear to take, training routes, daily routine (what/when to eat, et al) , etc.Here's some info on my trip:

I'm planning to ride approximately 100 miles a day, so I can get out to Seattle in about 20 days. I'm planning to take along my REI type camping gear: (1) small camping stove, 2-3 cannisters of fuel; (2) small pot/pan collection; (3) lightweight sleeping bag and tent. I'm generally going along places where I can stay with friends and acquaintenances, i.e., Madison, Minneapolis, capital of Montana whose name escapes me now, and Seattle are all lined up as pontential destinations. Otherwise, I'd camp and take a hotel if absolutely necessary. I'm also planning take a long a digital camera. With regard to clothing, I'm for sure getting a mountain bike shorts and also a water proof windbreaker, as well as a couple of breathable shirt or two.

Any advise as to what to bring? A good manageable weight in the panniers? What to eat? What sort of food to keep in reserve? Water bottles or Camel backs? Routes? Maps? Daily routines? is 100 miles per day too much, over a 30 day period? How much weight does one normally lose, ball-park wise?
