How about in terms of muscle development? Perhaps clothing size? Blood pressure? I've been riding 40-50 miles a week for the last 6. My weight has stayed the same, but I've gone down an entire clothing size above the waist, half of one below the waist. I've even had to have my helmet straps tightened. My blood pressure is finally starting to go down. It's really noticible, but I haven't actually lost weight. I'm losing fat and gaining muscle.
