Rosetta Stone is great but it's time intensive. I used it to teach my kids Spanish.
Before my daughter went to Italy, I took her over to the Italian American Club, found a nice elderly couple who still speak Italian at home, and they were thrilled to spend time with her and teach her some Italian. She would go over to their home for great food and language instruction by immersion. They also taught her plenty of cultural tips which prepared her for the amorous Italian men. She knew just how to deal with them. (as her mother I prefer to think that).
