Your approach sound just as fine as any other. Chain falling off is due to a mis-adjustment of the Front Derailleur. I assume you dropped the chain while shifting up front(?) - didn't see that detail, but would be surprised if you didn't. Shop will fix for you (hopefully), if not then there are planty of sources to find out how to DIY. Just post a new thread here and we'll all stumble over each other to impart our version of religious dogma regarding derailleur adjustment....
