Weight will be higher; not that important. Fit and finish may be better on the more expensive model. Adjustability is another option. Degree of float allowed. Durability is another.
Look, Time, Shimano are similar, then there's eggbeaters and speedplays. Find an LBS or two that carries these or find a buddy that's got them and give them a whirl.
