Most folks use #51 cleats which are single-release. That's the cleat that comes with the pedal. Being a cleat wimp, I use #56's which are multi-release. Some SPD pedals like the 540 can use both.
I like multi-release with the 540 as my normal reflex motion when your falling releases them, yet they hold firmly enough to yank the rear wheel off the ground.
