And humbug, that is exactly what my girlfriend has been telling me . . . and I agree, I can totally get too caught up in these things -- but it's so FUN!!! Anyway, I can't wait to put the order in for this thing.

So far my thinking has changed a bit, here is what I have planned now:
Frame/Fork: cross check
Headset: Chris King NoThreadSet 1-1/8" threadless, red (thought I'd spend here as advised)
Stem: I dunno, the CC complete comes with a "Tahoma 1-1/8" threadless. Forged. Black" so I may go with that
Handlebars: I'm going to check out the Nashbar 7075 Lite at my LBS as recommended by moxfyre
Handlebar wrap: also will check this at LBS
Shift/Brake Levers: STIs, probably Shimano 105 ST-5510 unless there is a cheaper alternative that is as good.
Brakes: probably Avid Shorty 4s
Bottom Bracket: probably 105s
Front Derailleur: Shimano 105 5500 double
Crankset: 105 FC5502 172.5mm 39-53 (I can get a good deal on this, just worried that 172.5 is too long and that the gear ratios aren't right)
Rear Derailleur: straying from the LX/XT advice and going 105 - 5600 on 9-speed (it says it is 10/9 speed compatible) - I can get it cheap.
Cassette: 105 HG70 9 speed 12-25 cassette
Pedals: my friend suggested eggbeaters that can be used with or without the shoes
Saddle: Brooks B17
Hubs: that fit the rims . . . .
Rims: Velocity Deep Vs are looking good
Tires: I want 25-30mm non-knobby tires, hopefully red. Tufo C Diamond D28 Clincher Tubular Cyclocross (red); Conti Grand Prix 4season 700x28c Blk DuraSk, Vittoria Rubino Pro 700x 23c!! Red, Pana T-Serv 700x28 Kev Black, also 32mm . . .

Remaining questions: hubs+rims+tires? gear ratios 39-53 and 12-25? bottom bracket? 105 - 5600 on 9-speed? what bank to knock over?
