Um, these ARE mainstream bikes. Cervelo sponsors CSC. That's about as mainstream as it gets.
For about 2500CDN you could get a handbuilt Ti frame and matched carbon forks. That's what I'd be doing.
Failing that, I think Cervelo is the most innovative mainstream builder in your list. I don't think Ridley, Willier or Bianchi can actually backup anything they do with much meaningful science. For Ridley it's all about silly tube shapes, and Bianchi still trades too much on their history for my liking. YMMV of course.
