Did you put all the spacers on one side or did you space them evenly between both sides of the hub? It needs to be the same on both sides or the wheel dish will not be right and you will never get the wheel to sit right in the bike. This would also contribute to excessive chain noise as the cog will be slightly off center and the chain will not be contacting the cog straight.
