you're right to question this stuff...and quite frankly training practices do change over time. it used to be common practice to avoid drinking water during endurance sports, now we know that's pretty wrong.
however, i have to say with the overwhelming amount of material that supports regular bouts of rest\recovery, coupled with the technology that can accurately measure power output and body ****ions, not to mention coaches and doctors that can afford to monitor atheletes year round i'm inclined to follow suit.
