The 2007 frames on the 7.3 through 7.9 models have a sloping downtube. My 2006 7.3FX has a non-sloping top tube.

Did he say that the 2006 7.3 Fx had a 7.5 frame or a 2007 7.5 frame? Either way, the part about scraping off the model number is enough for me to go to a different LBS.
