Maybe it is the taste of fear. Rock climbers claim to get a coppery taste in thier mouth after a harrowing climb or fall. I think it is supposed to be from the adrenalin or a surge of testosterone or something.

If you're breathing really hard, it can also be blood coming up from the lungs.
