if you have a good eye and aren't scared of a little smoke you can do just as good a job with a heavy-bottomed skillet with a lid (a $5 oven thermometer is also handy but not essential if you know your stove) .
my cast iron pan worked nicely (except when i tried doing a french roast, and then i kept beans on the heat too long and they burned; of course, you can do that to with a roaster).
