I'm usually pretty good at it, its just that the GP 3000s are very tight in combination with my mavic rims, and the touring tires were incredibly wide for the rim. By the time I got to the second tire of each wheel though I had figured out the particular technique for each, so I guess its just practice. Still, compressing a brand new fat tire laterally and pulling it around the rim so it stays put at the same time is pretty tough. If I had an extra hand it would probably be quite a bit easier.
