I noticed on a trip to Toronto that cyclists there will remove both the front wheel and seat when locking the bike. Presumably taking the seat makes it a lot harder to ride off with, or at least somewhat less desirable.

Here in the rapidly growing 'burbs, I just use a thickish cable lock, take the front wheel in with me, and keep the bike in sight.
