Hmm... given that the primary purpose of a bicycle is transportation, not entertainment, and given further that it is often necessary to get from point A to point B even when it happens to be raining, fenders just plain make sense. Personally, frames without fender clearance and fender and rack eyelets are a "peeve" for me.
Also, ONE of the benefits to a fixed gear is low maintenence and less to be damaged by foul weather. Therefore, If I had a multi-geared road bike and a fixed gear single speed both standing by while it was ranining, which bike do you think I would be more likely to take? Therefore, having fenders on a fixed gear just makes damn good sense doesn't it.
As for brakes, I'll lug around the extra whole ounce. I don't want to be without brakes, and I don't want anyone coming down a hill that I am riding, walking, or driving on without brakes either. If they can pull it off without getting killed, great! I'd just rather they not try it around me.
Other "peeves" :
1) I can't buy cotton bar tape around here (Had to order online).
2) Same with plugs.... and 700x23 or 700x20 tires.
3) Of the two LBSs, neither one has a single road bike.
4) People who ride on sidewalks.
5) People who ride on the wrong side of the road.
6) People who run lights.
7) Cars horns, even when it is supposed to be a hello.
8) Lowered cars.
9) Loud car stereos.
10) Loud exhaust systems.
