Do you mount and unmount your headlight several times a day? I mount and unmount my taillights several times a day. Fiddling with an O-ring in the cold sounds like a pain.

Also, how would you adjust the angle of the light with an O-ring? It seems that there would be just one angle, straight back at the windscreen of the cars behind you.

For a headlight I bet O-rings are wonderful, but a taillight is a different beast.
