When you import to iTunes there are little check boxes to the left of each song. If a song is checked, it will be imported, otherwise not. Alternatively, you can select each track, and then import them by going to Advanced > Convert selection to MP3.
You can get the track names by going to Advanced > Get CD Track Names.
