You should consider the Finnish archipelago (they claim 100.000 islands!), it's a bike accessible heaven! Also you should check out the Icehotel in Jukkasjärvi in Sweden (should be cheaper than Greenland).
I travelled a lot as a child, mostly here in Iceland and in Finnland but also including Sweden, Norway, Holland, England and Germany. No bikes, except for one day of rented bikes on Kökar island in the Finnish archipelago.
