Once you fit the bike on a frame that's too small (meaning the saddle will be adjusted far back) wouldn't that shift the weight too far back, over the rear tire???

And fwiw, Bianchis seem to have fairly short top tubes, so if in doubt, size up. My 55 is a tad on the short side.
