Some interesting comments up until now... I have no specific knowledge, but apparently that isn't a requirement for this thread anyway...

However, applying my limited knowledge of physics including what some have mentioned (action/reaction)...

Lunging doesn't increase overall speed It is more like reaching a part of your body out to cross the line before the rest of your body... In this scenario, the bike can be seen as an extension of the body. Reaching an arm out at the end of a running race doesn't make you faster, but the hand will reach the line faster than if you didn't reach out.

The bike is not likely to rebound and somehow slow down if you lunge too early... the rider stops pedaling to lunge, and the other riders simply keep sprinting all the way to the line...
