My wife and I prefer a 12 to 34 cog Shimano XT Cassette. The 34 is nice on those long steep climbs and the next two down, 30 & 26, are perfect (for me at least) grinding up the steep technical climbs. I've only found an 11 cog useful on my road bike and much prefer the larger cogs at the higher-gear end of the 12-34.
