Since there's a couple cx bikes in this list, the Bianchi Roger (SS, CX, Disc Brakes) fits the bill as well. It's pretty sweet but very pricey.

I'm thinking for my next bike, a San Jose, and swapping out the front fork for a Kona P2 disc fork and a disc brake, for a nice, singlespeed bad weather commuter. Some guy on the MTBR forums did the same and it looks sweet.
