I voted three, since that's what I normally have....saving up for a new frame for #3.

One road (frame finally bit it...once I get off my lazy backside a new frameset and stem will be in the mail. Fast as hell)
One mountain (ol reliable...not the fastest or most nimble...but it's a great in-betweener).
One folding (high maintenance machine, but fun and VERY nimble)
