I'd like to reuse as much as possible. If the cable housing is the proper length, why not reuse it?
I'm just wondering if I'll experience a difference in performance (i.e. difficulty shifting) or if the cable ends will destroy themselves if they are left un-capped.

The end caps are important. Crimping them on isn't vital. In fact, how do you crimp the nylon ends on 4mm shift housing?
Why wouldn't you want to install fresh housings with new cables? That's particularly true when moving parts to a new frame because the housing lengths might not match up pwerfectly anyway.
