For beginner track, and with your 42 ring, start with 81" which you can get with a 14t cog. When I'm lapping at 40kph (24-25mph) I'm thinking of coming off and swapping to a bigger chainring. Between 30 - 40kph, 81" is just fine. Our rental bikes use that gear.
