Park City is nice, but not where I would go if I were coming from another state. During ski season, maybe, but not for summer. After you get done mountain biking, it will get boring fast. There are some good hikes around the area, but nothing spectacular.
If you want some good, scenic hikes, check out Zion National Park. It is absolutely gorgeous. It is located in the southern part of Utah. The hikes there are very family friendly, plus lots of accomodations for traveling with kids. Plenty of mountain bike trails, too.
