I have not personally biked in the Gifford Pinchot but spent a good deal of my formative years there camping, fishing, etc. It is one of my favorite NFs in the state. It straddles the rain-shadow of the state, so the variety of forest is amazing, from lush to semi-arid.

If you've never taken the fam to St. Helens, it is a must-see. Great overview areas are Windy Ridge and the Johnson Ridge Observatory. Besides hikes, there are MTB-open trails trails that go into the blast zone. St. Helens lore is big stuff even up where I live, as we were in the ashfall path the day it erupted.
