I stopped by a shop that does a lot of wheelbuilding in this area (lots of Phils on Deep V's for the spoiled hipsters) and asked them what'd it cost to build up some Deep V's, Aeroheads, or Fusions on Ultegra hubs. They quoted me around $360 for parts, and $100 to build, with a turnover of at least two-weeks. It's a reputable shop, and they do good work, but I can get the same set from Spin Light cheaper, and probably faster (from reports I've read).

They recommended against the Aerohead, saying that's probably a little thin for some of what I put my wheels through in the city. So with only 100g or so difference on the Fusions and Deep V's I think I'm going to go with some Electric Blue Deep V's 24/28 spoke, Veloplugs, and Ultegra 6600 hubs (I'm 9 speed now, but in case I ever need to use it with a 10 speed cassette).
