Certainly... but it depends on the terrain and how much time you're giving yourself. I've done offroad touring on my MTB in the past (not so much anymore) and on fast rolling hardpack terrain. What I did with friends when I was younger was mount heavy duty racks and panniers on my bike, map out some lighter but longer offroad trails and take them to a campsite. Then set up camp, unmount the racks and go hit the singletracks nearby. The next day, we would break camp, remount the racks and all our gear and move along to the next campground. Many days we only went 50 miles or so but there were some days where we did full centuries with a great portion of it offroad. The trick is mapping out the trails so you can get to where you're going. You might have to compromise and end up hitting pavement to cut from one trail to another. Also, keep in mind the type of terrain. Our long-haul runs were done on tame light trails. If you expect to be doing 100 miles over pure technical rocky and rutted singletrack in a day, you might be surprised. Then again, you might surprise us instead.
