Squeaky disc brakes & quick release

I'm using Shimano Deore LX Hydraulic Disc Brakes nad for some time now, they've made a squeaky sound while riding (brake pad touching brake disc). I just tried to adjust my brakes, don't know if it worked, but seemed to me that the pad is still touching the disc. Then it hit me like a slippery fish; am I tightening the rear-wheel too much? As the rear-wheel is tightened the rear stays are moving towards each-other and the medial side of the disc begins to touch the medial brake pad. The squekyness started after I had to change the tube (removed thet particular wheel for the first time) so did I just overtighten the rear wheel? I basically use near maximum force to tighten it, I didn't think to get a feel of how tight it was from the beginning. How much force should I have to use on a quick release mechanism? How little force is safe to use?
