Go do a build on competitive cyclist and you'll not only get a list of what needs to be taken into account, but also the weights on many items as well.

After that, I'd maybe stick on an extra 10% of weight for good measure. Stuff like grease, stickers, paint, etc is usually not accounted for in manufacturer claims.

Example: Wheel bearing grease can add 10-30g per wheel, and some heavy stickering on wheels have been known to add as much as 200g/wheelset... just a thought to keep in mind.

And while I'm on the topic of wheels, you left off rim tape or glue, tubes, tires, etc.
