The part you actually bend tends to be round they may be oval higher up on the blades, but where the drops go is round.

1" stearing tube is fine or better for what you have in mind. It just depends on your level of comitment to the fat head tube. I am somewhat comited because I like to buy good parts and them move them to new frames if I want to try something different frame wise. So I am trying to keep everything the same and the MTB standard seems to be the way things are going. But optimally 1" is all you need on the kind of bike you are proposing.

I don't know who you are using for your parts, but nova, for instance, has tons more stuff in stock than they list online. So you might find the crown you want if you ask.
