I'll start by just converting the rear mech to SS, then later get rid of multiple chainrings. How do I convert the cluster? can I get single screw on cogs for it?

If it is a freewheel cluster, unscrew the thing and just take the whole thing off and spin on a Shimano Freewheel and re-dish the wheel so that it is centered in the rear drops. You can probably swop the spacers from one side of the axle to the other. I did that on my wifes' old freewheel mtb and it worked perfectly. Cheap quick and dirty.
