I think that cadence rule only applies while sitting... when standing you can use a much lower cadence without damaging your knees, because you aren't applying power with your knee fully bent.

When sitting, keep the cadence above 80. If you can't keep the cadence above 80... then stand, possibly sprinting until you can sit back down with a cadence above 80.

This is my take on things. I'm curious to hear other opinions.
