Your arms seem short for your height (like mine), so top tube length is most important. CC is giving you a 56-57cm top tube with 11cm stem. The 61cm Etape has a 60.6cm top tube with 12cm stem.

Standover on the Etape is 32", and your bike inseam is 38". That means you will have lots of seatpost hanging out, and the drop from seat to handlebar will be significant.

A +17* angle stem combined with the 74* head tube will give lots of rise. Flipping the stem to -17* will put the stem nearly parallel to the ground.

IMO the bike geometry is not the best for your personal geometry. But you may find that you like it.
