Beats me, but they do it as part of a standard blood workup. I get my blood workup done every January as part of my annual physical.
I do find it interesting that there are folks here who have a natural hematocrit in the high-40s but claim they're lousey cyclists. My natural hematocrit for two years running has been 40, and this year I started taking an iron supplement three times a week to counter anemia, yet by all accounts I'm a pretty strong cyclist.
