You could end up with mushy brakes. Some people don't mind, but if you are going from Campagnolo braking to Shimano (or some mushy combination) it takes a bit of getting used to.
I'm using Shimano brakes (both Dura Ace and Ultegra) on two bikes with 10-speed Campy Ergo brifters and there is no difference in brake feel or power compared to other bikes with all-Shimano brakes and levers so I don't think there is any problem with this mix-and-match approach.

This combination gives me a quick-release on both the calipers and the levers. I can clear ANY tire when I want to remove a wheel. The problem would be using Campy calipers with Shimano levers where you won't have any quick-release at all.
