I have one bike (it was free!) that has toe overlap. Got to be honest, toe overlap puts me right off a bike. Just a personal point of view, but I don't think toe overlap should occur unless it's for a track bike sort of thing. I know that overlap shouldn't be an issue, but on the bike I do have it, I've found there's always a time when I get caught out -and it's one thing I don't want to deal with at an inopportune time.
Have you considered a 26 inch wheel tourer to negate this? I know of course the problem is finding a 26 inch wheel tourer! I suppose another possibility is to go with a custom frame build but that's big money.
If the LHT fits, then it sounds like that's you best choice. Another thing (assuming you don't do this already) is to not fit a front fender.
