how are the two tubes combined? is one of them inserted in the other and have a mold that covers the edge and sanded smooth?

The carbon composite going into the 787 is likely very different from the carbon composite found in bicycle frames. The properties of carbon composites are very dependent on it's processing because the bulk material properties depend very heavily on the interplay between the CF strands and the epoxy which the strands are embedded in. Because the processing going into bicycle components and the airplane components differ, and the epoxy blend will probably differ as well, the material properties will differ.
