Fuji Touring Bike 12 Speed

Hello,

I am pretty new to bikes and I just purchased a used one off eBay on a slight whim. (Hope I didn't get ripped off!) I was thinking of converting it into fixed gear or singlespeed, but now I'm beginning to rethink that decision. Are old touring bikes suitable for that? Also, I have scarce knowledge about components, especially older ones, and was just gonna slowly swap them out for brand new parts. However, upon doing some more research (reading up on archived threads), it seems like the components on this bike aren't too shabby. True/false?

The seller's description:

Can anyone identify the touring series and year (if it indeed is part of the Fuji Touring Series)?
