Suspension ain't for everyone. I know guys that still tear it up on full rigged bikes.

As bv asked, whats yer weight like? If you are over ohhhh, say 170 (rough estimate because suspensions vary a lot) then a lot of the bikes you try out will have a soft "Cadddilac" feel as the springs (or air pressure) will be way soft and the rebound will really bite, you will either have none at all or way to much. Especially if you are looking at all-mountain/XC type bikes where a firmer setting is preferred.

If you are not riding extremely rough terrain, ie lots of washboard, rock gardens, consecutive drops and/or anything else that will rattle yer bones a bunch, then you may want to opt for a front suspension only bike.
You will also get more bike so to speak for the same price as a full suspension.

As for the transition from rigged to a fully, how easy it is will depend on your skill and ability to adapt. Some techniques will stay the same while other will drastically change.
