You didn't mention your dislikes. Salads do not have to be just lettuce and tomato. Add apples, raisins, or other fruits, Grilled chicken breast, grilled fish or even a thin steak can be added to a salad. Sesame seeds can add some texture and sesame oil as part of your dressing adds a lot of flavor. Different flavor oils work well when grilling foods. Sesame oil, ginger and garlic rubbed on any meat is healthy and adds flavor.
Look at Mediterranean foods. Watch some cooking shows, wander through some markets, try different things. Keep asking questions.
