Because you gain nothing by assuming. Assuming only opens up the possibility that you are wrong. By choosing to not assume anything you gain the possibility of learning something new (if the evidence is presented to you) without the risk of being wrong. Choosing to not assume anything has every advantage over assuming without sufficient evidence.

Of course, I understand why you wouldn't want waste your time testing a result which will probably be negative, but that's no reason to assume the opposite result. Choosing not to assume anything isn't any more bothersome than assuming.
