I would go with cantis for all the reasons stated above (better clearance, especially with fenders, use of the studs, more "period-correctness"...) and for one extra reason: although both types of brakes will allow you to brake effectively, having a canti on the rear wheel and a side pull brake on the front one means you will have two brakes that don't feel the same way.

Been there, done that.
