That is very true. Back in '72 or '73 I bought a new PX-10 that came with sew up tubular tires. I also had a set of 27" clincher wheels with Campy hubs. Switching back and forth between wheels would make it a completely different ride. Sew ups felt like they were glued to the road. Equally high pressure clinchers felt like they bounced down the road.
