While talking ebay scenarios, is there a way to separate shipping from the seller with limited feedback?

I was interested in a bike that would have to be shipped. The seller had 0 feedback. I was going to bid near $200 as a max (covered via paypal) and require that the seller use a independent/local bike shop nearby (that I pick) to ship. As a buyer, I would pay the bike shop directly for packing/shipping. Problem that I've found is that most bike shops want the seller to pay in order to limit the bike shop's liability should the item have issues.
I wanted to separate shipping so that if the seller bolted, he wouldn't also get my $75 for shipping/handling. I also wanted someone experienced shipping the bike.

I thought that this would work, but apparently it doesn't. Any ideas (aside from staying away from sellers with no feedback)?
