Deep V's are (supposedly) durable as hell, but they're also mind blowingly heavy. You'll do just as well with Open Pros and it'll save you 15-20 pounds per wheel. The only downside is that the Chrome baggers won't be as attracted to your eye candy.

People ride carbon forks on 29'ers all the time. Unless there's something I haven't heard about catastrophic failures in Sputnik forks, I wouldn't worry about it at all.
I agree Deep Vs are heavy. They are also trendy. But durable is something I like and
they are that, with a few exceptions I've hear about (walls too thin in a few
wheels, quality control off for a while because of high demand).

I also agree that carbon forks aren't super fragile but they can also get destroyed in
one good crash that Cro-Mo would survive. Carbon is quite a bit smoother--I almost went
with a carbon fork that was on sale and turned back to steel. Just preferences--carbon makes me nervous. As far as heading off the wolves--the chicanery of bfssfg is only that.
