If you have a decent bike to start with, you can covert old bikes to single speed pretty quickly. Unscrew the freewheel, toss on a bmx freewheel, re-dish the rear wheel, remove the extra chainrings, and shorten the chain. I have seen people put ads on CL offering to do this for folks.
