Well, my Brooks saddle continues to remain on my bike despite locking it up all over town all the time. That said, I do not have quick release anything and I use a good U lock.

I think that if you get the lower end (~$35) Kryptonite U lock and a cable (if you have a quick release front wheel), you'll be fine. Just don't leave lights on the bike - those will be stolen for sure. If you don't have quick release, the U lock will be sufficient. There are a couple of LBS's near the convention center where you can pick up a decent lock conveniently.
